Gluten Free Recipe For Bread Machines

Below is a gluten free bread machine recipe you can use if you don’t have one handy.

Handy Tips

• Temperature of ingredients is important in bread-machine baking. Ideal temperatures are between 75°F–90°F. Cold ingredients should be allowed to come to
  room temperature.
• Measure all ingredients accurately and have them ready before adding to bread pan.
• When measuring ingredients, use liquid measuring cups for liquids, and dry measures for dry ingredients.
• Stir all flours first, spoon into dry measure and level off using the flat side of a knife or spatula – do not pack down.

Step 1: Remove the bread pan from bread machine.
Step 2: Place all wet ingredients into bread pan first.
Step 3: Place all dry ingredients on top of wet with yeast being last. (Avoid yeast touching the wet ingredients)
Step 4: Place bread pan in machine and close lid.
Step 5: Select the gluten free setting on your bread machine. If you don’t have this option, select the “Basic” setting.
Step 6: Select the crust and loaf settings.
Step 7: Press start.
Step 8: Remove bread from bread pan when finished.
Step 9: Allow the bread to cool on a rack before slicing.

Ingredients (1.5 lb. Loaf)

• 1 1/4 cups of warm water
• 3 eggs (room temperature)
• 1/4 cup oil (vegetable, olive or canola), or 4 tablespoons of daily free butter
• 1 1/4 teaspoon salt
• 3 tablespoons honey or sugar
• 3 1/4 cups gluten-free bread baking flour (this recipe uses Bob’s Red Mill baking flour)
• 2 teaspoons active dry yeast

Note: This is my recipe that I like when setting the crust on medium. However, you may not. That’s ok. Use ingredients that you or your family like and then stick with it.

• How long can you freeze homemade bread? The bread will keep for 3 to 6 months in a freezer. Note that flavors will begin to dull after a month in the freezer.
• How do you defrost bread without making it soggy? Take the bread out of the wrap and let it thaw in the fridge until it is no longer frozen (overnight for a loaf and 2 to 3 hours for individual slices). Heat oven to 380 degrees F and refresh bread for 3 to 5 minutes. It will taste great.
• How to store homemade bread. Store homemade bread at room temperature in a cool dry place for up to 2-3 days. Heat and humidity causes the bread to mold. To keep bread soft store it in an airtight plastic bag.
• Homemade bread verses store bought. Homemade bread is much healthier than any bread that your bakery or store sells. Home-baked bread contains exactly what you want to eat. The difference between the two types of bread is that with your bread you control the ingredients including their quantity and quality.
